Ingredients
  

12 oz (340g) penne pasta

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

3 cloves garlic, minced

1 tsp Italian seasoning

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

      Cook the Chicken:

        In a large skillet over medium heat, add olive oil. Season the chicken pieces with salt and pepper. Once the oil is hot, add the chicken to the skillet. Cook for about 6-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

          Sauté Garlic and Tomatoes:

            In the same skillet, add minced garlic and Italian seasoning, stirring for about 30 seconds until fragrant. Add the cherry tomatoes and cook for about 3-4 minutes until they are softened.

              Combine Ingredients:

                Stir in the fresh spinach and let it wilt slightly. Return the cooked chicken to the skillet.

                  Make the Sauce:

                    Pour in the heavy cream and add the Parmesan cheese. Mix well and bring to a gentle simmer. If the sauce is too thick, stir in some reserved pasta water until you reach the desired consistency.

                      Toss Pasta:

                        Add the cooked penne pasta to the skillet and mix well, ensuring all ingredients are evenly coated in the creamy sauce.

                          Serve & Garnish:

                            Divide the pasta among serving plates. Garnish with fresh basil leaves and additional Parmesan cheese if desired.
