EASY STUFFED BELL PEPPERS

4 medium bell peppers (any color)

1 cup cooked quinoa or rice

1 cup canned black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Sour cream or avocado for serving (optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Wash the bell peppers and slice the tops off. Remove the seeds and membranes, making sure they are ready to be stuffed.

    Make the Filling: In a large mixing bowl, combine the cooked quinoa (or rice), black beans, corn, diced tomatoes, half of the cheese, cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.

      Stuff the Peppers: Drizzle the insides of the bell peppers with olive oil. Carefully spoon the filling into each pepper, pressing down gently to pack it in. Place the filled peppers upright in a baking dish.

        Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. This allows the peppers to soften and the flavors to meld together.

          Add Cheese: After 30 minutes, remove the foil and sprinkle the remaining cheese on top of each stuffed pepper. Return to the oven and bake uncovered for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

            Serve: Once done, remove the stuffed peppers from the oven and let them cool slightly. Garnish with fresh cilantro or parsley, and serve with a dollop of sour cream or slices of avocado if desired.
