1 cup cooked rice (white or brown)

1 cup canned corn (drained) or 1 cup fresh corn (kernels)

1 cup cooked chicken, shredded (rotisserie chicken works great)

1/2 cup diced bell pepper (any color)

1/4 cup salsa (mild or spicy depending on your preference)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Base: In a large bowl, combine the cooked rice and shredded chicken.

    Sauté the Veggies: In a skillet, heat the olive oil over medium heat. Add the diced bell pepper and cook for about 3-4 minutes until slightly softened. Add the corn and continue to cook for another 2 minutes.
