Easy Spinach & Ricotta Stuffed Shells

20 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the shells: In a large pot, bring salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and let cool.

      Prepare the filling: In a mixing bowl, combine ricotta cheese, chopped spinach, 1/2 cup mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Fill the shells: Carefully stuff each pasta shell with the spinach and ricotta mixture using a spoon or a piping bag.

          Assemble the dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in the dish, seam side up. Pour the remaining marinara sauce over the shells and sprinkle with the remaining 1/2 cup of mozzarella cheese.

            Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy your delightful stuffed shells!
