20 jumbo pasta shells

1 ½ cups ricotta cheese

2 cups fresh spinach, chopped

1 cup mozzarella cheese, shredded (plus more for topping)

½ cup grated Parmesan cheese

1 egg

2 cups marinara sauce

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta Shells: In a large pot of salted boiling water, cook the jumbo shells according to package directions until al dente. Drain and set aside to cool slightly.

      Prepare Filling: In a mixing bowl, combine ricotta cheese, chopped spinach, mozzarella cheese, Parmesan cheese, egg, minced garlic, dried herbs, salt, and pepper. Stir until well combined.

        Stuff the Shells: Using a small spoon or a piping bag, carefully fill each cooked pasta shell with the ricotta and spinach mixture.

          Layer the Marinara: In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly across the bottom. Arrange the stuffed shells in the dish, seam side up. Pour the remaining marinara sauce over the top of the shells, ensuring they are covered.

            Add Cheese: Sprinkle additional mozzarella cheese over the top of the shells for a cheesy crust.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Serve: Let the dish cool for a few minutes before serving. Garnish with fresh basil if desired.
