Easy Queso Recipe {Crockpot}

Ingredients
  

1 lb ground beef (or chorizo for a spicier kick)

1 can (10 oz) diced tomatoes with green chilies, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 block (8 oz) cream cheese, softened

2 cups shredded sharp cheddar cheese

1 teaspoon taco seasoning

1 teaspoon garlic powder

½ teaspoon onion powder

Fresh cilantro, for garnish (optional)

Tortilla chips, for serving

Instructions
 

In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess grease.

    Transfer the cooked ground beef to your crockpot.

      Add the diced tomatoes (with juices), black beans, corn, cream cheese, shredded cheddar cheese, taco seasoning, garlic powder, and onion powder to the crockpot.

        Stir all the ingredients together until well combined.

          Cover the crockpot and cook on low for 2-3 hours, or until the cheese is melted and everything is heated through. If you prefer a thicker queso, keep it cooking for an additional hour.

            Give it a good stir before serving. Taste and adjust seasoning if necessary.

              Garnish with fresh cilantro if desired and serve with tortilla chips for dipping.
