Ingredients

4 large egg whites

1 cup granulated sugar

1 tsp white vinegar

1 tsp cornstarch

1/2 tsp vanilla extract

1 cup heavy whipping cream

2 tbsp powdered sugar (for sweetening the cream)

1 tsp vanilla extract (for the cream)

Fresh mixed fruits (e.g., strawberries, kiwi, passionfruit, blueberries)

Mint leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 275°F (135°C). Line a baking tray with parchment paper and draw a circle (about 9 inches in diameter) on the paper as a guide for the meringue.

Make the Meringue: In a large bowl, beat the egg whites using an electric mixer on medium speed until soft peaks form. Gradually add the granulated sugar, 1 tablespoon at a time, continuing to beat until the mixture is glossy and stiff peaks form.

Add Ingredients: Gently fold in the vinegar, cornstarch, and vanilla extract using a spatula, being careful not to deflate the egg whites.

Shape the Meringue: Spoon the meringue mixture onto the prepared circle, smoothing the top and creating a slight well in the center to hold the cream and fruit later on.

Bake: Place the meringue in the preheated oven and bake for 1 hour. Turn off the oven and let the meringue cool completely in the oven with the door slightly ajar (about 1-2 hours).

Prepare the Cream: While the meringue cools, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form.

Assemble the Pavlova: Once the meringue is completely cool, carefully transfer it to a serving plate. Spoon the whipped cream into the center of the meringue and gently spread it out.

Add Fruits: Top with your choice of fresh mixed fruits, arranging them beautifully for a colorful presentation.

Garnish: Add a few mint leaves for a pop of color and freshness.

Serve & Enjoy: Slice and serve immediately for the best texture, savoring the delightful combination of the crispy meringue, silky cream, and juicy fruits!
