Ingredients

8 ounces (about 225g) your favorite pasta (like penne or spaghetti)

2 cups fresh broccoli florets

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

4 cups vegetable broth (or chicken broth for non-vegetarians)

1 cup grated Parmesan cheese (plus more for serving)

Salt and pepper to taste

Juice of 1 lemon

Fresh basil leaves for garnish (optional)

Instructions

In a large pot, melt the butter over medium heat. Once melted, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes, until fragrant, being careful not to burn the garlic.

Add the pasta to the pot, then pour in the vegetable broth. Stir well to combine and bring to a boil.

Once boiling, reduce the heat to medium-low. Stir in the broccoli florets, cover the pot, and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and the broccoli is tender.

Remove the pot from heat, and stir in the grated Parmesan cheese. If the pasta seems too dry, add a splash more broth.

Add salt, pepper, and lemon juice to taste. Combine everything thoroughly until creamy and well mixed.

Serve hot, garnished with extra Parmesan cheese and fresh basil leaves if desired.
