Easy Healthy Broccoli Pasta

Ingredients
  

8 oz whole wheat pasta (spaghetti or penne)

2 cups broccoli florets

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Zest and juice of 1 lemon

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (optional)

Fresh basil or parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the whole wheat pasta according to package instructions until al dente. When the pasta is almost done, add the broccoli florets to the pot for the last 3-4 minutes of cooking.

    Drain and Reserve Water: Once cooked, drain the pasta and broccoli, reserving about 1/2 cup of the pasta water.

      Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant but not browned.

        Combine: Add the drained pasta and broccoli to the skillet. Toss to coat in the garlic oil.

          Add Seasonings: Pour in the lemon juice and zest, and mix well. Gradually add reserved pasta water, one tablespoon at a time, until you reach your desired consistency (it should be light and slightly saucy). Season with salt and pepper to taste.

            Finish with Cheese: If desired, stir in the grated Parmesan cheese until melted and well combined.

              Serve: Plate the pasta immediately, garnished with fresh basil or parsley. Add extra cheese on top if desired.
