Ingredients

1 pound ground beef

1 cup uncooked long-grain rice

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes, undrained

1 can (10.5 oz) condensed cream of mushroom soup

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C).

In a large skillet over medium heat, brown the ground beef along with the diced onion and minced garlic until the beef is fully cooked. Drain excess grease.

Stir in the diced tomatoes (with juices), cream of mushroom soup, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix well to combine.

Add the uncooked rice and frozen mixed vegetables to the skillet. Stir until all ingredients are evenly mixed.

Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly.

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and sprinkle the shredded cheddar cheese on top. Return to the oven and bake uncovered for an additional 10-15 minutes or until the cheese is bubbly and golden.

Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
