Ingredients
  

1 lb ground beef (preferably 80/20 for flavor)

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 tablespoon rice vinegar

4 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon gochujang (Korean chili paste) - optional for heat

2 green onions, finely chopped

1 tablespoon sesame seeds

Freshly ground black pepper, to taste

2 teaspoons vegetable oil (for cooking)

Instructions
 

Make the Marinade: In a bowl, combine soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang (if using). Whisk until the sugar is dissolved.

    Marinate the Beef: In a separate bowl, place the ground beef and pour the marinade over it. Mix the ground beef thoroughly with the marinade until well combined. Let it marinate for at least 30 minutes in the refrigerator for enhanced flavor.

      Cook the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated ground beef, spreading it out evenly in the pan.

        Sauté the Beef: Cook the beef for about 5-7 minutes, breaking it up with a spatula as it cooks. Allow it to caramelize a bit by leaving it undisturbed for a minute or so at a time. The beef should be browned and cooked through.

          Add Green Onions and Sesame Seeds: Stir in the chopped green onions and sesame seeds. Season with freshly ground black pepper to taste. Cook for an additional 1-2 minutes until green onions are slightly wilted.

            Serve: Remove from heat and serve the ground beef bulgogi over steamed rice or in lettuce wraps. Garnish with extra green onions and sesame seeds if desired.
