Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

Ingredients
  

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon fish sauce

2 tablespoons brown sugar

1 tablespoon lime juice

1 tablespoon vegetable oil

2 garlic cloves, minced

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric

Wooden or metal skewers (if using wooden, soak them in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon sriracha (optional, for heat)

1-2 tablespoons water (to thin, if desired)

Instructions
 

In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, vegetable oil, minced garlic, coriander, cumin, and turmeric. Mix well to form the marinade.

    Add the chicken pieces to the marinade and stir to coat evenly. Cover and refrigerate for at least 30 minutes up to 2 hours for enhanced flavor.

      While the chicken is marinating, prepare the peanut sauce. In a mixing bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and sriracha. Adjust the consistency by adding water as needed. Set aside.

        Preheat your grill to medium-high heat. If using wooden skewers, remember to drain and remove the water before grilling.

          Thread the marinated chicken pieces onto the skewers. Be sure to leave a little space between each piece for even cooking.

            Place the chicken skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).

              Remove the skewers from the grill and let them rest for a few minutes.

                Serve the grilled chicken skewers hot with the peanut sauce drizzled on top or on the side for dipping. Garnish with chopped cilantro or crushed peanuts, if desired.
