Ingredients

2 cups rolled oats

1 cup nuts (almonds, walnuts, or pecans), chopped

1/2 cup seeds (pumpkin seeds or sunflower seeds)

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup dried fruit (raisins, cranberries, or apricots), chopped

Instructions

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

In a large bowl, combine the rolled oats, chopped nuts, and seeds.

In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt until well combined.

Pour the wet ingredients over the dry mixture and stir until everything is evenly coated.

Spread the mixture evenly on the prepared baking sheet, pressing it down with a spatula to form an even layer.

Bake in the preheated oven for about 20-25 minutes, or until golden brown, stirring halfway through for even toasting.

Remove from the oven and allow it to cool completely; it will become crunchier as it cools.

Once cooled, mix in the dried fruit and store in an airtight container.
