1 cup couscous

1 cup coconut milk

1/2 cup water

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/4 cup dried fruits (such as raisins, apricots, or cranberries)

1/4 cup chopped nuts (such as almonds or pistachios)

Fresh fruit slices (e.g., banana, mango, or strawberries) for serving

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium saucepan, bring the coconut milk, water, and a pinch of salt to a gentle boil over medium heat.

    Once boiling, stir in the couscous, honey (or maple syrup), vanilla extract, and ground cinnamon until well combined.

      Remove the saucepan from heat, cover with a lid, and let sit for 5 minutes to allow the couscous to absorb the liquid.

        After 5 minutes, fluff the couscous with a fork to separate the grains and stir in the dried fruits and chopped nuts.
