1 cup Arborio rice

4 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

Zest of 1 lemon (optional)

Raisins or dried fruit for garnish (optional)

Ground nutmeg for garnish (optional)

Instructions
 

Rinse the Arborio rice under cold water until the water runs clear. This helps remove excess starch and prevents the pudding from becoming too sticky.

    In a large saucepan, combine the rinsed rice, whole milk, heavy cream, sugar, and salt. Stir to combine the ingredients thoroughly.

      Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent the rice from sticking to the bottom.

        Once simmering, reduce the heat to low and continue to cook for about 20-25 minutes, stirring occasionally. You want the rice to be tender and the mixture to thicken.

          When the rice is cooked and the pudding is creamy, remove it from the heat. Stir in the vanilla extract, ground cinnamon, and lemon zest (if using) until well combined.

            Allow the rice pudding to cool slightly before serving. It will thicken further as it cools. If you prefer it warm, serve immediately.

              Spoon the pudding into bowls and garnish with raisins or dried fruit and a sprinkle of ground nutmeg if desired.
