Ingredients
  

1 cup rolled oats

1/2 cup honey or maple syrup

1/2 cup peanut butter (creamy or crunchy)

1/4 cup brown sugar (light or dark)

1/2 teaspoon vanilla extract

1/4 cup chocolate chips or dried fruit (optional)

Pinch of salt

Instructions
 

In a large microwave-safe bowl, combine the peanut butter, honey (or maple syrup), and brown sugar. Microwave on high for 30 seconds to 1 minute, or until the mixture is warm and easily stirrable.

    Remove the bowl from the microwave and stir in the vanilla extract and a pinch of salt.

      Add the rolled oats to the peanut butter mixture and mix thoroughly until all the oats are well-coated.

        If using, fold in the chocolate chips or dried fruit to the mixture.

          Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal.

            Transfer the granola mixture into the lined dish and press it down firmly with the back of a spatula or your hands until it's evenly spread out.

              Place the dish in the refrigerator for about 30 minutes, or until the mixture is set.

                Once set, lift the granola out of the dish using the parchment paper overhang and cut into bars or squares.

                  Store the granola bars in an airtight container at room temperature or in the refrigerator for up to a week.
