1.5 lbs boneless, skinless chicken thighs

1 cup jasmine rice, rinsed

2 cups chicken broth

1 medium cucumber, finely diced

1 cup Greek yogurt

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

1 teaspoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika (optional, for garnish)

Fresh dill sprigs for garnish (optional)

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Rice and Chicken: In a large baking dish, spread the rinsed jasmine rice evenly across the bottom. Place the chicken thighs on top of the rice in a single layer.

      Mix Tzatziki Sauce: In a medium bowl, combine the Greek yogurt, diced cucumber, minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Stir until well mixed and creamy.

        Combine Ingredients: Pour the tzatziki mixture evenly over the chicken thighs, ensuring that each piece is coated.

          Add Broth: Carefully pour the chicken broth around the edges of the baking dish, avoiding pouring it directly over the chicken to maintain the tzatziki layer on top.

            Bake: Cover the baking dish tightly with aluminum foil and bake for 35-40 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (165°F internal temperature) and the rice is tender.

              Serve: Once done, remove from the oven and let it rest for 5 minutes. Fluff the rice with a fork and serve the chicken with a sprinkle of paprika and fresh dill sprigs for garnish if desired.
