Dry Apricot Pudding (Qamar Al-Deen)

200g dried apricots

1/2 cup sugar (adjust to taste)

4 cups water

1/2 cup cornstarch

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp salt

1 cup milk (or plant-based alternative)

Chopped nuts for garnish (almonds, pistachios, or walnuts)

Fresh mint leaves for garnish

Instructions
 

Prepare the Dried Apricots: Rinse the dried apricots under cold water and then soak them in 2 cups of warm water for about 30 minutes, or until they are soft. Drain and chop them into small pieces.

    Make the Apricot Mixture: In a saucepan, combine the chopped apricots, sugar, and remaining 2 cups of water. Bring to a gentle boil over medium heat. Allow it to simmer for about 10-15 minutes until the apricots are very soft and the mixture thickens slightly.

      Blend the Mixture: Remove from heat and let it cool slightly. Then, blend the mixture in a food processor or blender until smooth. You can also leave it slightly chunky if you prefer some texture.

        Prepare the Thickening Agent: In a small bowl, mix cornstarch with 1/2 cup of milk to create a smooth paste.

          Combine and Cook: Return the blended apricot mixture to the saucepan over low heat. Gradually whisk in the cornstarch mixture. Add the vanilla extract, ground cinnamon, and salt. Stir continuously until the pudding thickens, about 5-7 minutes.

            Set the Pudding: Once thickened, pour the pudding into individual serving bowls or a large dish. Allow it to cool to room temperature, then refrigerate for at least 2 hours, or until completely set.

              Serve: Before serving, garnish with chopped nuts and fresh mint leaves for an added touch of freshness and crunch.
