For the Dough:

4 cups all-purpose flour

1/2 cup unsalted butter, cold and cubed

1/4 cup vegetable shortening

1 teaspoon salt

1 teaspoon turmeric (for color)

1/2 cup cold water (more if needed)

For the Filling:

1 lb ground beef

1 tablespoon vegetable oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh thyme or 1 teaspoon dried thyme

1 teaspoon allspice

1/4 teaspoon cayenne pepper (adjust for heat preference)

1/2 teaspoon black pepper

1 teaspoon salt

1/2 cup beef broth

1/2 cup breadcrumbs (optional, for texture)

2 green onions, chopped

1 tablespoon soy sauce

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine flour, salt, and turmeric.

      - Add cold cubed butter and shortening; mix until the mixture resembles coarse crumbs.

        - Gradually add cold water, mixing until the dough comes together. Do not overmix.

          - Divide the dough into 2 equal parts, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

            Make the Filling:

              - In a skillet, heat vegetable oil over medium heat. Add onions and garlic, sauté until translucent.

                - Add the ground beef, breaking it apart with a spatula. Cook until browned.

                  - Stir in thyme, allspice, cayenne, black pepper, and salt; mix well.

                    - Pour in beef broth and let simmer for 5-7 minutes, allowing flavors to meld and liquid to reduce.

                      - Remove from heat, mix in breadcrumbs, green onions, and soy sauce. Allow to cool.

                        Assemble the Patties:

                          - Preheat your oven to 375°F (190°C).

                            - On a lightly floured surface, roll out each dough disc to a thickness of about 1/8 inch.

                              - Using a round cutter (about 5-6 inches in diameter), cut out circles from the dough.

                                - Place a generous spoonful of the beef filling in the center of each circle.

                                  - Fold the dough over the filling to create a half-moon shape. Press the edges together with your fingers, then crimp with a fork to seal.

                                    Bake the Patties:

                                      - Place patties on a baking sheet lined with parchment paper.

                                        - Brush the tops with an egg wash (1 beaten egg mixed with 1 tablespoon water) for a golden finish.

                                          - Bake for 25-30 minutes or until the patties are golden brown.

                                            Serve and Enjoy:
