Ingredients

6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons chopped fresh cilantro

Optional garnishes: sliced radishes, paprika, or lime wedges

Instructions

Prepare the Eggs: Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove it from the heat, and let it sit for 12 minutes.

Ice Bath: After 12 minutes, transfer the eggs to an ice bath (a bowl of ice water) for at least 5 minutes to stop the cooking process and make peeling easier.

Peel Eggs: Carefully peel the cooled eggs and rinse them under cold water to remove any shell fragments. Pat dry with a paper towel.

Halve Eggs: Slice the eggs in half lengthwise and remove the yolks, placing them in a mixing bowl. Set the egg white halves aside.

Mix Filling: In the bowl with the yolks, mash them with a fork. Add the avocado, mayonnaise, Dijon mustard, lime juice, garlic powder, salt, and pepper. Mix until smooth and creamy. Stir in the chopped cilantro until well combined.

Stuff the Eggs: Using a spoon or a piping bag, fill each egg white half with the avocado yolk mixture.

Garnish: If desired, sprinkle with paprika or top with sliced radishes for an extra pop of flavor and color. You can also serve with lime wedges on the side for an added tang.

Chill & Serve: Place the deviled eggs on a serving platter and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
