Ingredients

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and finely diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

Powdered sugar, for dusting

Instructions

Prepare the Apples: In a bowl, combine the diced apples with a tablespoon of sugar and a sprinkle of cinnamon. Let them sit for about 10 minutes to release some moisture.

Make the Batter: In a separate mixing bowl, whisk together the flour, remaining sugar, baking powder, cinnamon, and salt. In another bowl, mix the milk, egg, and vanilla extract until well combined. Pour the wet mixture into the dry ingredients and stir until just combined.

Fold in Apples: Gently fold the apple mixture into the batter, ensuring that the apples are evenly distributed throughout.

Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test the oil's readiness by dropping a small amount of batter in; it should sizzle and rise to the surface.

Fry the Bites: Use a spoon or small cookie scoop to drop small balls of batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook for about 2-3 minutes per side or until golden brown. Use a slotted spoon to flip them halfway through.

Drain and Dust: Once cooked, remove the fritter bites from the oil and place them on paper towels to drain excess oil. While still warm, dust them generously with powdered sugar.

Serve and Enjoy: These delightful apple fritter bites are best served warm. Enjoy them as a sweet treat at gatherings, or simply as a delicious dessert!
