Ingredients

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup sun-dried tomatoes, chopped (optional)

Olive oil spray

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C).

In a medium bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, oregano, basil, salt, pepper, and sun-dried tomatoes (if using). Mix until all ingredients are well combined.

Place the chicken breasts on a clean cutting board. Using a sharp knife, slice each chicken breast horizontally to create a pocket. Be careful not to cut all the way through.

Generously stuff each pocket with the spinach and cheese mixture, pressing gently to ensure the filling is secure inside. You may use toothpicks to seal the openings if necessary.

Lightly spray a baking dish with olive oil. Place the stuffed chicken breasts in the dish.

Spray the tops of the chicken breasts with olive oil for a nice golden finish.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Remove from oven and let the chicken rest for about 5 minutes before serving.

Optionally, garnish with chopped fresh parsley for a touch of color before serving.
