1 cup pitted Medjool dates, chopped

1 cup unsweetened shredded coconut

1 cup rolled oats

1 cup mini pretzels, crushed

½ cup almond butter (or peanut butter)

¼ cup honey or maple syrup

½ teaspoon vanilla extract

½ teaspoon cinnamon

A pinch of salt

¼ cup chocolate chips (optional)

Prepare Your Pan: Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later. Lightly grease the paper with cooking spray or oil.

    Mix the Base: In a large mixing bowl, combine the chopped dates, shredded coconut, rolled oats, and crushed pretzels. Stir until well combined.

      Make the Binding Mixture: In a separate smaller bowl, mix the almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt until smooth and creamy.

        Combine Mixtures: Pour the binding mixture over the dry ingredients and mix until everything is evenly coated. If using, fold in the chocolate chips at this stage.

          Press into Pan: Transfer the mixture to the prepared baking dish. Use your hands or the back of a spatula to press the mixture down firmly and evenly into the dish. Ensure it's well compacted to hold together after baking.

            Chill and Set: Place the baking dish in the refrigerator for at least 1 hour to set. This helps the squares hold their shape when cut.

              Slice and Serve: Once set, lift the mixture out of the pan using the parchment overhang. Cut into squares or bars of your preferred size.

                Store: These can be stored in an airtight container in the fridge for up to a week or frozen for longer storage.
