1 cup all-purpose flour

2 tablespoons sugar (or maple syrup for sweetness)

1 tablespoon baking powder

1/4 teaspoon salt

1 cup almond milk (or any dairy-free milk of choice)

2 tablespoons vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Optional toppings: fresh fruits, maple syrup, dairy-free yogurt, or nuts

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, combine the almond milk, vegetable oil, and vanilla extract. Mix until thoroughly combined.

      Pour the wet ingredients into the dry ingredients. Gently stir until just combined. Be careful not to over-mix; some lumps are okay.

        Heat a non-stick skillet or frying pan over medium heat. Lightly grease with oil if necessary.

          Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles start to form on the surface and the edges look set.

            Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.

              Remove from the skillet and keep warm while repeating with the remaining batter.

                Serve warm with your choice of toppings, such as fresh berries, a drizzle of maple syrup, or a dollop of dairy-free yogurt.
