1.5 lbs chicken thighs, boneless and skinless

1 cup long-grain rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, diced

3 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken thighs with ground cumin, smoked paprika, oregano, lime juice, olive oil, salt, and pepper. Mix well and marinate for at least 30 minutes (or refrigerate for up to 4 hours for deeper flavor).

    Cook the Rice: Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions, using either water or broth for added flavor. If using brown rice, follow instructions for cooking time.

      Sauté Vegetables: In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the diced red onion and bell pepper until they become tender, about 5-7 minutes. Add minced garlic and cook for an additional minute until fragrant.

        Cook the Chicken: Remove the chicken from the marinade and add it to the skillet. Cook for about 6-8 minutes on each side, or until the chicken is fully cooked (internal temperature should reach 165°F). Once cooked, let it rest for a few minutes before slicing.

          Heat Black Beans: In a small saucepan, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste and a squeeze of lime juice if desired.
