2 medium cucumbers, thinly sliced

1 large apple, cored and chopped into small cubes (preferably Granny Smith or Honeycrisp)

1/2 red onion, finely sliced

1/2 cup walnuts, roughly chopped

1/2 cup feta cheese, crumbled (optional for a vegan option)

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

2 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Start by preparing all your ingredients. Thinly slice the cucumbers, chop the apple into small cubes, and finely slice the red onion.

    In a large mixing bowl, combine the cucumber slices, apple cubes, and red onion.

      Add the chopped walnuts and crumbled feta cheese to the mixing bowl. If you're making this salad vegan, you can omit the feta.

        In a small bowl, whisk together the lemon juice, olive oil, fresh dill, salt, and pepper.

          Drizzle the dressing over the salad and gently toss everything together until well combined.

            Taste the salad and adjust the seasoning if necessary. You can add more lemon juice or salt according to your preference.

              Let the salad sit for about 10 minutes to allow the flavors to meld together.
