1 ¾ cups all-purpose flour

½ cup cocoa powder

1 tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

¾ cup sugar

½ cup brown sugar, packed

1 large egg

1 tsp vanilla extract

1 tbsp red food coloring

½ cup buttermilk

1 cup white chocolate chips

Cream cheese frosting (for topping)

Optional: sprinkles for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.

      In a large mixing bowl, cream together the softened butter, sugar, and brown sugar using an electric mixer until light and fluffy (about 2-3 minutes).

        Add the egg, vanilla extract, and red food coloring to the butter mixture. Mix until fully incorporated, scraping down the sides as needed.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

            Fold in the white chocolate chips gently using a spatula.

              Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.

                Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.

                  Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                    Once cooled, top each cookie generously with cream cheese frosting and sprinkle with colorful sprinkles if desired.
