Crockpot Southwest Chicken

Ingredients
  

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Juice of 1 lime

1 cup shredded cheddar cheese (optional, for serving)

Fresh cilantro, chopped (for garnish, optional)

Tortilla chips or tortillas, for serving

Instructions
 

Place the chicken breasts in the bottom of the crockpot.

    In a medium bowl, combine black beans, corn, diced tomatoes with green chilies, onion, garlic, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well.

      Pour the mixture over the chicken in the crockpot.

        Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

          Once cooked, shred the chicken using two forks right in the crockpot and mix it thoroughly with the other ingredients.

            Squeeze the lime juice over the chicken and stir to incorporate.

              Serve hot, topped with shredded cheddar cheese and fresh cilantro, accompanied by tortilla chips or wrapped in tortillas.
