1.5 lbs steak (such as sirloin or ribeye), cut into 1-inch cubes

4 medium potatoes, diced into bite-sized pieces

1 cup beef broth

1 cup sour cream

1 cup shredded cheddar cheese

1 cup chopped green onions, divided

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp onion powder

1 tsp garlic powder

Salt and pepper to taste

¼ cup olive oil

½ cup cooked bacon bits (optional)

Prepare the Ingredients: Start by seasoning the steak cubes with salt, pepper, smoked paprika, onion powder, and garlic powder. Toss them to ensure they are evenly coated.

    Sear the Steak (optional): In a skillet over medium-high heat, heat the olive oil. Add the seasoned steak cubes in batches, searing them for about 2-3 minutes on each side until browned. This step adds depth to the flavor but can be skipped if you prefer a quicker method.

      Layer in the Crockpot: Place the diced potatoes at the bottom of the crockpot. Add the seared steak on top of the potatoes.

        Add Flavor: Pour the beef broth over the steak and potatoes. Then, stir in the minced garlic and half of the chopped green onions.

          Cook: Cover the crockpot and set it to low. Cook for about 6-8 hours or on high for 3-4 hours, until the steak and potatoes are tender.
