Crispy Salmon and Rice Bowl

Ingredients
  

2 salmon fillets (skin-on)

1 cup jasmine rice

2 cups water

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon grated fresh ginger

1 avocado, sliced

1 cup cucumber, thinly sliced

½ cup edamame (shelled)

2 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Fresh cilantro (for garnish)

Salt and pepper, to taste

Instructions
 

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 15-18 minutes, or until the rice is tender and water has been absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

    Prepare the Salmon: While the rice is cooking, prepare the salmon. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.

      Make the Sauce: In a small bowl, whisk together the soy sauce, honey, sesame oil, and grated ginger. Set aside.

        Cook the Salmon: In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Carefully flip the salmon and cook for another 3-4 minutes, or until the desired doneness is reached. In the last minute of cooking, pour the sauce over the salmon to glaze it lightly.

          Assemble the Bowl: In serving bowls, place a scoop of jasmine rice as the base. Top with crispy salmon, sliced avocado, cucumber, and edamame.

            Garnish: Sprinkle chopped green onions, sesame seeds, and fresh cilantro on top for added flavor and presentation.

              Serve: Drizzle any remaining sauce over the assembled bowls and serve immediately.
