4 small onions (white or yellow)

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika (smoked or sweet)

1 teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

Cooking spray or olive oil spray

Instructions
 

Prepare the Onions:

    - Peel the onions and cut about 1 inch off the top of each onion. Make 4-6 vertical cuts from the top down to about 1/2 inch above the root end, being careful not to cut all the way through.

      - Soak the onions in buttermilk for at least 30 minutes to tenderize and flavor them.

        Create the Coating:

          - In a large bowl, combine the flour, cornmeal, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and pepper. Mix well to combine all the dry ingredients.

            Coat the Onions:

              - After soaking, carefully remove each onion from the buttermilk and allow excess to drip off.

                - Gently dredge each onion in the flour mixture, making sure to get the flour into the blooms. Shake off any excess flour.

                  Air Fry the Onions:

                    - Preheat your air fryer to 375°F (190°C).

                      - Lightly spray the air fryer basket with cooking spray. Place the coated onions in the basket with the bloom side up, ensuring they do not touch each other.

                        - Spray the tops of the onions lightly with olive oil spray for extra crispiness.

                          Cook:

                            - Air fry the onions for about 12-15 minutes, or until they are golden and crispy. Depending on your air fryer model, you may need to shake the basket halfway through cooking.

                              Serving:

                                - Once cooked, carefully remove the mini blooming onions and serve immediately with your favorite dipping sauce, such as ranch or spicy mayo.
