2 medium-sized sweet onions

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1 teaspoon hot sauce (optional)

1 cup panko breadcrumbs

Prep the Onions: Peel the onions, and using a sharp knife, slice off the top and bottom. Cut each onion into quarters, making sure not to cut all the way through—leave about half an inch at the base so the petals stay intact.

    Soak the Onions: In a bowl, mix buttermilk and hot sauce, if using. Place the prepared onions into the mixture and let them soak for at least 30 minutes to tenderize.

      Mix Dry Ingredients: In a separate bowl, combine the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Stir until well mixed.

        Bread the Onions: Remove the onions from the buttermilk, allowing excess to drip off. Dredge each onion in the flour mixture, ensuring every petal gets coated evenly.

          Coat with Panko: Next, press the coated onions into panko breadcrumbs for a crispy texture. Ensure the breadcrumbs stick well, covering all sides.

            Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

              Air Fry the Onions: Lightly spray the air fryer basket with cooking spray. Place the prepared mini blooming onions in the basket, making sure they are not overcrowded. You may need to do this in batches.

                Cook: Spray the tops of the onions lightly with cooking spray. Air fry for about 12-15 minutes, or until they are golden brown and crispy. Check halfway through and flip them for even cooking.

                  Serve: Remove the blooming onions from the air fryer and let them cool for a minute. Serve with a side of your favorite dipping sauce, such as ranch or spicy aioli.
