Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup crumbled feta cheese

1/2 cup mayonnaise

1/4 cup honey

1 teaspoon red pepper flakes (adjust for spice preference)

Fresh parsley, for garnish

Olive oil, for frying

Instructions

Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season them on both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.

Create the Breading Station: Set up three separate bowls:

      - In the first bowl, add the all-purpose flour.

        - In the second bowl, whisk the eggs until well combined.

          - In the third bowl, combine the panko breadcrumbs with a pinch of salt and pepper.

Bread the Chicken: Dredge each chicken breast first in the flour, shaking off the excess. Next, dip it into the egg mixture, allowing any excess to drip off, then coat it with the panko breadcrumbs until fully covered. Place the breaded chicken on a plate and set aside.

Make the Hot Honey Sauce: In a small bowl, mix the honey with the red pepper flakes. Adjust the amount of red pepper flakes based on how spicy you want the sauce.

Fry the Chicken: In a large skillet over medium heat, add enough olive oil to cover the bottom of the pan. Heat the oil until shimmering. Carefully place the breaded chicken breasts in the hot oil, cooking them for about 5-7 minutes on each side or until they are golden brown and the internal temperature reaches 165°F (75°C). Work in batches if necessary to avoid overcrowding the pan.

Combine Feta and Mayo: In another bowl, mix the crumbled feta cheese with the mayonnaise until well combined. This will act as a creamy dip for the chicken.

Serve: Once the chicken is cooked, remove them from the skillet and place them on a paper towel-lined plate to drain any excess oil. Drizzle the hot honey sauce over the chicken and serve with the feta mayo dip on the side. Garnish with fresh parsley for an added touch.
