Ingredients

4 boneless, skinless chicken breasts

1 cup feta cheese, crumbled

1/2 cup breadcrumbs (panko for extra crispiness)

1/2 cup all-purpose flour

2 large eggs

1/4 cup hot honey (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper

Salt to taste

Olive oil for frying

Fresh herbs (like parsley or dill) for garnish

Instructions

Marinate the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and paprika. Drizzle half of the hot honey over the chicken, ensuring it's evenly coated. Let it marinate in the fridge for at least 30 minutes.

Prepare the Feta Mixture: In a bowl, mix crumbled feta cheese with a tablespoon of olive oil, a pinch of salt, and half of the remaining hot honey. Set aside.

Set Up Breading Station: In one bowl, place the all-purpose flour. In a second bowl, whisk the eggs. In a third bowl, add the breadcrumbs.

Bread the Chicken: Remove the marinated chicken from the fridge. Dredge each piece first in flour, shaking off the excess. Then dip in the egg wash, and finally coat in the breadcrumbs, pressing firmly to ensure a good coverage.

Cook the Chicken: Heat a generous amount of olive oil in a frying pan over medium-high heat. Once hot, carefully add the breaded chicken breasts. Cook for about 6-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 74°C).

Add the Feta: About 2 minutes before the chicken is done frying, spoon the feta mixture over the top of each chicken breast. This will allow the feta to warm and slightly melt.

Finish with Honey: Once the chicken is cooked, drizzle the remaining hot honey over the top while still in the pan, allowing it to caramelize slightly.

Serve: Transfer the crispy hot honey feta chicken to a serving platter. Garnish with fresh herbs and serve immediately.
