2 large sweet onions

1 cup all-purpose flour

1 cup breadcrumbs (panko preferred for extra crispiness)

1 teaspoon baking powder

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or milk with 1 tablespoon vinegar)

Oil for frying (vegetable or canola)

Instructions
 

Prepare the Onions: Start by peeling the onions and slicing them into ½-inch thick rings. Carefully separate the rings and set them aside.

    Make the Batter: In a mixing bowl, combine the flour, baking powder, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

      Prepare the Buttermilk Dip: In another bowl, pour the buttermilk.

        Coat the Onion Rings: Dip each onion ring first into the buttermilk, allowing any excess to drip off. Then, transfer the onion rings to the flour mixture, coating them evenly. For extra crunch, you can dip them back into the buttermilk and then back into the flour mixture for a double coating.

          Coat with Breadcrumbs: After coating with flour, immediately toss the onion rings in the panko breadcrumbs, ensuring they are fully covered.

            Heat the Oil: In a deep pan or a fryer, heat about 2 inches of oil to 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles and rises to the surface, the oil is ready.

              Fry the Onion Rings: Carefully add a few onion rings at a time into the hot oil, avoiding overcrowding. Fry for 2-3 minutes on each side or until they turn golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
