500g beef (flank or sirloin), thinly sliced against the grain

1/2 cup cornstarch

1/4 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil (for frying)

3 tablespoons sweet chilli sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon oyster sauce

2 cloves garlic, minced

1 small red bell pepper, sliced

1 small green bell pepper, sliced

1-2 fresh red chillies, sliced (optional for extra heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Prepare the Beef: In a bowl, combine beef slices, salt, black pepper, cornstarch, all-purpose flour, and baking soda. Mix well until the beef is evenly coated. Let it sit for about 15 minutes to marinate.

    Heat the Oil: In a deep frying pan or wok, heat vegetable oil over medium-high heat. You will need enough oil to deep-fry the beef (about 2 inches deep).

      Fry the Beef: Once the oil is hot (test by dropping a small piece of beef – it should sizzle), carefully add the beef in batches, ensuring not to overcrowd the pan. Fry until crispy and golden brown (about 3-4 minutes per batch). Remove with a slotted spoon and drain on a paper towel.

        Make the Sauce: In a large skillet or wok, reduce the heat to medium. Add a little more oil if needed. Stir-fry the minced garlic until fragrant (about 30 seconds). Then add the sliced red and green bell peppers, and fresh chillies. Stir-fry for 2-3 minutes until they are slightly tender.

          Combine Sauce Ingredients: In a small bowl, whisk together sweet chilli sauce, soy sauce, rice vinegar, and oyster sauce. Pour this mixture into the skillet with the veggies and stir well.

            Add the Beef: Gently add the crispy beef to the sauce and veggies. Toss everything together so that the beef is well coated with the sauce and heated through.

              Garnish and Serve: Transfer the crispy chilli beef to a serving platter. Garnish with chopped green onions and sprinkle with sesame seeds. Serve immediately with steamed rice or noodles.
