Ingredients

1 lb boneless, skinless chicken breasts, cut into strips

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon cayenne pepper (optional, for heat)

2 large eggs, beaten

2 cups panko breadcrumbs

Oil for frying (vegetable or canola)

Instructions

Marinate the Chicken: In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken strips, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Prepare the Breading Stations: Set up three shallow dishes. In the first dish, combine all-purpose flour, baking powder, and cayenne pepper (if using). In the second dish, place the beaten eggs. In the third dish, pour in the panko breadcrumbs.

Coat the Chicken: Remove chicken strips from the marinade, shaking off excess liquid. Dredge each strip in the flour mixture, then dip it into the beaten eggs, and finally coat it evenly with the panko breadcrumbs. Press the breadcrumbs onto the chicken strips to ensure they stick well.

Heat the Oil: In a deep skillet or frying pan, pour about 1-2 inches of oil. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a few breadcrumbs; they should sizzle immediately.

Fry the Chicken Strips: Working in batches, add the breaded chicken strips to the hot oil, being careful not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the chicken strips to a plate lined with paper towels to drain excess oil.

Serve and Enjoy: Once all chicken strips are fried, serve them hot with your favorite dipping sauces like honey mustard, ranch, or BBQ sauce!
