2 large russet potatoes, peeled and grated

1 cup cooked breakfast sausage, crumbled

1 cup shredded sharp cheddar cheese

1/2 small onion, finely diced

2 cloves garlic, minced

2 large eggs

1/4 cup all-purpose flour

Salt and pepper to taste

1/4 teaspoon smoked paprika

Olive oil, for frying

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat a large non-stick skillet or griddle over medium heat and add a drizzle of olive oil.

    Prepare the grated potatoes by placing them in a clean kitchen towel and squeezing out excess moisture. This step is crucial for achieving a crispy texture.

      In a large bowl, combine the grated potatoes, crumbled sausage, shredded cheddar cheese, diced onion, minced garlic, eggs, flour, smoked paprika, salt, and pepper. Mix well until fully combined.

        After the skillet is hot, scoop about 1/2 cup of the potato mixture into the skillet, flattening it gently with a spatula to form a patty. Repeat with remaining mixture, making sure not to overcrowd the skillet.

          Cook for about 4-5 minutes on one side until it's golden brown and crispy. Flip the patties carefully, adding more oil if needed, and cook for an additional 4-5 minutes on the other side.

            Once cooked, transfer the hash browns to a paper towel-lined plate to drain any excess oil. Season with more salt if desired.

              Garnish with chopped chives or parsley before serving.
