2 cups cooked chicken, shredded

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sautéed bell peppers and onions (optional)

4 large flour tortillas

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon cumin

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Prepare the Filling: In a mixing bowl, combine the shredded chicken with garlic powder, paprika, and cumin. If using, add the sautéed bell peppers and onions for extra flavor and texture. Mix well to combine.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Place one tortilla in the heated skillet. Evenly spread 1/4 of the chicken mixture over half of the tortilla, then top it with a mix of the shredded cheddar and Monterey Jack cheeses. Fold the other half of the tortilla over the filling to create a half-moon shape.

        Cook Until Crispy: Cook the quesadilla for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip it over using a spatula and cook for an additional 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

          Repeat: Remove the quesadilla from the skillet and place it on a cutting board. Cover it loosely with foil to keep warm. Repeat the process with the remaining tortillas and filling.
