Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

2 large eggs

1 cup panko breadcrumbs

½ cup mayonnaise

¼ cup sweet chili sauce

2 tablespoons sriracha (adjust to taste)

1 tablespoon honey

1 tablespoon apple cider vinegar

2 green onions, sliced (for garnish)

Oil for frying

Instructions

Prepare the Chicken: In a medium bowl, season the chicken pieces with salt, pepper, garlic powder, and paprika. Toss to coat evenly.

Breading Setup: Set up a breading station with three bowls — one with flour, the second with beaten eggs, and the third with panko breadcrumbs.

Breading Process: Dip each piece of chicken first into the flour, ensuring it’s completely coated. Shake off any excess flour. Then dip it into the beaten eggs, followed by the panko breadcrumbs, pressing gently to adhere.

Fry the Chicken: In a large skillet, heat about ½ inch of oil over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches, ensuring not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, honey, and apple cider vinegar until smooth.

Combine Chicken and Sauce: In a large mixing bowl, toss the crispy chicken pieces with the bang bang sauce until fully coated.

Serve: Plate the sauce-coated chicken, garnish with sliced green onions, and enjoy!
