Crispy Bang Bang Chicken

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 large eggs

1 cup panko breadcrumbs

Oil for frying (vegetable or canola)

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Prepare the Chicken: In a large mixing bowl, season the chicken pieces with salt, pepper, garlic powder, onion powder, and smoked paprika. Toss to coat evenly.

    Dredge the Chicken: Set up three bowls - one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each piece of chicken in the flour, shaking off excess, then dip it into the egg, and finally coat it with panko breadcrumbs. Ensure each piece is fully coated.

      Heat the Oil: In a large skillet or deep fryer, heat about 1-2 inches of oil over medium-high heat until it reaches 350°F (175°C).

        Fry the Chicken: Working in batches, carefully add the breaded chicken pieces to the hot oil. Fry until golden brown and crispy, about 4-6 minutes per side. Remove with a slotted spoon and drain on paper towels.
