Ingredients

1 (5.2 oz) package Boursin cheese (any flavor)

1 cup panko breadcrumbs

½ cup finely grated parmesan cheese

1 tsp garlic powder

½ tsp dried thyme

½ tsp smoked paprika

1/4 cup fresh parsley, chopped (for garnish)

2 large eggs

1 tbsp Dijon mustard

Salt and pepper to taste

Olive oil spray (for baking)

Instructions

Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.

In a medium bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, dried thyme, smoked paprika, salt, and pepper. Mix well to evenly distribute the seasonings.

In another bowl, whisk together the eggs and Dijon mustard until smooth.

Take the package of Boursin cheese and remove it from the wrapping. You can leave it whole or slice it into rounds for easier dipping.

Dip each piece of Boursin cheese into the egg mixture, allowing any excess to drip off, then coat thoroughly in the seasoned panko breadcrumbs. Make sure to press the breadcrumbs firmly onto the cheese to create a good crust.

Place the coated Boursin on the prepared baking sheet and repeat with the remaining cheese.

Once all pieces are coated, lightly spray the tops with olive oil to help them crisp up in the oven.

Bake in the preheated oven for 20-25 minutes, or until the coating is golden brown and crispy.

Remove from the oven and let them cool for a couple of minutes. Garnish with fresh parsley before serving.

Serve warm with crackers, bread, or fresh vegetables for dipping.
