Ingredients
  

1 lb flank steak

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

2 cups cooked brown rice (or your choice of grain)

1 cup cherry tomatoes, halved

1 cup corn, fresh or canned

1 avocado, sliced

1 cup fresh spinach or arugula

½ cup crumbled feta cheese (optional)

2 tablespoons fresh cilantro, chopped

1 lime, cut into wedges

Hot sauce (optional, for serving)

Instructions
 

Marinate the Steak: In a bowl, combine olive oil, salt, pepper, smoked paprika, garlic powder, and onion powder. Add the flank steak to the marinade and let it rest for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Cook the Steak: Preheat your grill or stovetop grill pan over medium-high heat. Remove the steak from the marinade and discard the leftover marinade. Grill the steak for about 4-5 minutes on each side for medium-rare (or longer for your desired doneness). Once cooked, transfer it to a cutting board and let it rest for 5 minutes.

      Slice the Steak: After resting, slice the steak against the grain into thin strips.

        Prepare the Rice Base: In bowls, divide the cooked brown rice equally as the base for the steak bowls.

          Layer the Ingredients: On top of the rice, add a generous portion of spinach or arugula, followed by the cherry tomatoes, corn, avocado slices, and sliced steak.

            Add Toppings: Sprinkle crumbled feta cheese and fresh cilantro over the assembled bowls for added flavor.
