Creamy Pesto Chicken with Roasted Tomatoes

4 boneless, skinless chicken breasts

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish

Preheat the oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them out in a single layer and roast in the preheated oven for about 15-20 minutes, or until they are soft and slightly caramelized. Remove from the oven and set aside.

      Cook the Chicken: While the tomatoes are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
