1 lb (450g) boneless, skinless chicken thighs, diced

1 cup wild rice, rinsed

8 oz (225g) mushrooms, sliced (button or cremini)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, diced

2 stalks celery, diced

4 cups chicken broth

1 cup heavy cream

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Stir in the garlic and mushrooms, cooking for an additional 3-4 minutes until the mushrooms are tender.

    Cook the Chicken: Add the diced chicken thighs to the pot. Season with salt, pepper, thyme, and rosemary. Cook, stirring occasionally, until the chicken is browned on the outside (about 5-7 minutes).

      Add the Wild Rice: Stir in the rinsed wild rice, then pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 40-45 minutes, or until the wild rice is tender.

        Stir in Cream: Once the wild rice is cooked, lower the heat and stir in the heavy cream. Let the soup simmer for another 10 minutes to allow the flavors to meld together.

          Adjust Seasoning: Taste the soup and adjust seasoning with more salt and pepper if needed.

            Serve: Ladle the soup into bowls, garnish with fresh chopped parsley, and enjoy!
