Creamy Garlic Shrimp Pasta

8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1 cup heavy cream

1 cup cherry tomatoes, halved

1 tablespoon olive oil

2 tablespoons butter

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the shrimp, season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side or until they turn pink. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining tablespoon of butter and the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

        Add Cream and Tomatoes: Pour in the heavy cream and stir in cherry tomatoes. Bring to a gentle simmer and let it cook for about 5 minutes, allowing the tomatoes to soften.

          Combine Pasta and Shrimp: Reduce the heat to low. Add the cooked pasta and shrimp back into the skillet. Mix well until everything is evenly coated in the creamy sauce. If the sauce is too thick, add reserved pasta water, a little at a time, until the desired consistency is achieved.

            Add Cheese and Adjust Seasoning: Stir in the grated Parmesan cheese until melted and mixed throughout. Taste and adjust seasoning with salt, pepper, and red pepper flakes for heat if desired.

              Serve: Remove from heat and garnish with freshly chopped parsley. Plate the creamy garlic shrimp pasta and serve immediately, with extra Parmesan on the side if desired.
