6 large ripe tomatoes, chopped

1 cup cherry tomatoes, halved

1 large onion, diced

3 cloves garlic, minced

2 cups low-sodium vegetable broth

1 cup heavy cream (or coconut cream for vegan)

1 tablespoon olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Crusty bread, for serving

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onions and sauté for about 5-7 minutes until translucent. Add minced garlic and sauté for another minute until fragrant.

    Add Tomatoes and Spices: Stir in the chopped large tomatoes and halved cherry tomatoes into the pot. Add dried basil, dried oregano, salt, and pepper. Cook for 10-12 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.

      Incorporate Broth: Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.

        Blend for Creaminess: Once the soup has simmered, use an immersion blender to puree the soup until smooth, leaving some chunks for texture. For a chunkier version, blend only half and leave the rest as is.

          Add Cream: Stir in the heavy cream (or coconut cream if making vegan) and heat through without boiling. Taste and adjust seasoning with more salt and pepper if needed.

            Serve: Ladle the hot soup into bowls, garnish with fresh basil leaves, and serve with your favorite crusty bread on the side.
