1 lb chicken sausage (sliced)

1 cup orzo pasta

1 medium onion (diced)

3 cloves garlic (minced)

2 cups chicken broth

1 cup heavy cream

1 cup spinach (fresh)

1 cup cherry tomatoes (halved)

1 teaspoon Italian seasoning

Salt and pepper to taste

Grated Parmesan cheese (for serving)

2 tablespoons olive oil

Fresh basil (for garnish)

Instructions
 

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned for about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Orzo and Broth: Pour in the orzo pasta, mixing it with the onions and garlic. Add the chicken broth and bring to a simmer. Cook uncovered for about 8-10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.

        Incorporate Cream and Vegetables: Lower the heat and stir in the heavy cream, Italian seasoning, cherry tomatoes, and fresh spinach. Return the cooked sausage to the skillet. Season with salt and pepper to taste.
