Ingredients

8 oz penne pasta

2 tbsp olive oil

1 lb chicken breast, diced

4 slices thick-cut bacon, chopped

1 small onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 packet ranch seasoning mix

1 cup shredded cheddar cheese

1 cup baby spinach (optional)

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Once cooked, remove it from the skillet and set aside, leaving the grease in the pan.

Sauté Chicken: In the same skillet, add olive oil if needed, and increase the heat to medium-high. Add the diced chicken breast, season with salt and pepper, and cook for about 7-10 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the onions and cook for 2-3 minutes until they become translucent. Add the minced garlic and continue to sauté for another 30 seconds until fragrant.

Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Add the ranch seasoning mix and whisk to incorporate. Let the mixture simmer for about 5 minutes until it thickens slightly.

Combine Ingredients: Stir in the shredded cheddar cheese, allowing it to melt into the sauce. If using, add the baby spinach and let it wilt. Finally, return the cooked chicken and bacon to the skillet, mixing everything well.

Combine Pasta and Sauce: Add the drained penne pasta to the skillet and toss everything together until the pasta is well-coated in the creamy ranch sauce. Adjust seasoning with additional salt and pepper, if necessary.

Serve: Garnish with fresh parsley before serving for a pop of color and freshness. Enjoy your creamy chicken bacon ranch pasta hot!
