1 large head of cauliflower, cut into florets

1/4 cup unsalted butter

1/4 cup heavy cream (or Greek yogurt for a lighter option)

3 cloves garlic, minced

1/2 cup grated Parmesan cheese (optional)

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Prepare the Cauliflower: In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender. Drain well.

    Sauté the Garlic: In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

      Mash the Cauliflower: In a food processor or using a hand mixer, combine the drained cauliflower, sautéed garlic and butter, heavy cream (or yogurt), and Parmesan cheese (if using). Blend until smooth and creamy.
